SPICY SWEET POTATO AND QUINOA SALAD

Serves one hungry person, or two as a side dish

You will need

2 tbsp. qunioa
Coconut oil
One medium sweet potato, peeled and chopped into 1cm cubes
½ cup walnuts halved
½ cup pepitas
¼ tsp. cayenne pepper (more if you like it spicy)
1 avocado chopped into 1 cm cubes
Handful baby rocket

Method

Cook quinoa with 3 tbsp. water in a small frying pan

Meanwhile add chopped sweet potato to a saucepan. Just cover with water and boil. Cook until sweet potato is just soft.

Once water is absorbed add 1 tbsp. coconut oil, and lightly fry for crunch. Keep watching the quinoa to make sure it doesn’t burn. When it lightly changes colour, remove from the heat.

Once sweet potato is tender drain off water. Heat 1 tbsp. of oil in a fry pan. Add sweet potato and cayenne, and toss through oil. Lightly frying the outside of the potato, and drying out excess moisture.

In a bowl add rocket, pepitas, walnuts and quinoa. Mix together.   

Add the sweet potato and avocado to the bowl. Gently toss together.

Serve and enjoy!
