Almond Chilli Dukkah with smashed avocado - Breakfast Delights Preview

Earlier this week I released my brand new e-book, Breakfast Delights. Which is now available right here on my site, but for now I thought I would share one of my favourite recipes from the book. Once you pre-make the dukkah, it's a quick easy option to have handy on your busier days. Enjoy! 

Prep time 10 minutes | Cooking time 10 minutes | Serves one with left over dukkah

Ingredients 

1 cup almonds

2 tsp ground cumin

2 tsp ground coriander

2 tsp sea salt flakes

2 tsp dried chilli flakes

1 1/2 tsp chia seeds

1 avocado

1 piece of bread

slice of lime

Method

Preheat oven to 180 degrees Celsius

Line a baking tray with oven paper and lay almonds evenly on top

Toast almonds for 5-10 minutes until lightly brown

Add almonds to food processor and pulse until a rough fine texture is reached

Add salt, cumin and coriander. pulse together

Stir through chilli flakes and chia seeds

In a separate bowl, mash avocado with a fork

Toast a piece of your favourite seed, rye, or sourdough bread

Spread avocado on toast, dust generously with dukkah.

Serve with a squeeze of fresh lime
