Chocolate cookies have been a long time favourite of mine, which makes me even more excited to share this recipe with you! Eat this healthy version straight out of the oven, in fact you can eat the whole batch out of the oven, and not feel guilty! 

You will need 

  • 3/4 cup almond meal
  • 3/4 cup LSA 
  • 2 tbsp cacao 
  • 2 tsp vanilla extract 
  • 3 tbsp organic maple syrup (make sure you get the good stuff) 
  • 2 tbsp melted coconut oil 
  • 1/4 cup chopped raw cashews 


Preheat oven to 180 degrees Celsius, and line a baking tray with baking paper. 

Combine all dry ingredients in a large bowl and mix with a spoon. 

Combine wet ingredients in a separate bowl. 

Pour wet ingredients into dry, and gentling mix together with a spoon. 

Make little balls of mixture with your hands and space them evenly on the tray, making sure they don't touch. 

Press down each ball with the palm of your hand, until a cookie shape is formed. 

Bake for 15 minutes until firm on the outside. Be careful not to overcook, as you won't see them burn being that they are chocolate. 

Allow to cool slightly and enjoy with a glass of almond milk!
