CAULIFLOWER SOUP

This winter I've jumped on the soup bandwagon like never before! I'm really enjoying trying different combos, and having a yummy hot lunch on the cooler days. 

While I was away with my girlfriends a few weeks ago, rather than eating out we cooked most of our own food. One of those dishes being this yummy cauliflower soup that we created together. It is so easy, and delicious to eat!

CAULIFLOWER SOUP

YOU WILL NEED  

3 cloves of garlic chopped

2 leeks finely sliced

1 head of cauliflower

1 can of coconut cream

3-4 cups of water, depending on the consistency you like your soup to be

Pinch of Himalayan salt  

Coconut oil  

METHOD

Heat coconut oil over medium to high heat. Add garlic and leek. Cook until lightly brown and fragrant

Add chopped cauliflower chunks and stir to coat in leek

Pour in coconut cream, water and salt. Bring to the boil. Reduce to simmer for 20 minutes or until cauliflower is soft and tender

Remove from heat and allow to cool slightly

Using a stick blender, blend until smooth

Place back on low heat until desired temperature is reached

Serve with crusty seed bread, enjoy!
