Meet Natalie. A power packed 20-something who is rocking it at living well and running a love filled business. Natalie's restaurant is called Greenhouse Factory, and is situated at Kirra on the Gold Coast.  It's my favourite restaurant because it's jam packed with organic, vegan goodness, beautiful decor and the best staff. If you haven't already been, put Greenhouse Factory at the top of your to-do list! 

Tell us a little bit about who you are

I'm a 24 year old Gold Coast girl with a vision. I have been a vegan for 4 years and am passionate about inspiring people to make compassionate choices.

How did you get here? Was there a moment where everything changed?

I was not very well, I was covered in psoriasis, fatigued and overweight.

After the dermatologist put me on a low dose of oral chemotherapy medication I started looking for other options. A friend of mine was doing a raw detox and suggested I should try it for myself. Within a few weeks I was healing. I have never looked back and stand by the fact that changing my diet was the best thing that ever happened to me!

Fast forward 4 years and Greenhouse factory was born out of a passion for spreading my message of compassion.

What does a regular day looks like for you?

Get up – take my dog for a walk with my partner

Check emails and do some greenhouse ‘housekeeping’

Head to the restaurant and work open to close (about 12-14 hours)

What are your favourite ways to get active?

Since opening the restaurant my time has become quite limited so running around the restaurant has become my cardio. I am however trying to find a balance in running the business, without running myself into the ground. I like to incorporate being active with my daily schedule, so I have started to ride my bike to the restaurant at least 2 times a week, which is about 10km. This is always nice as its along the beach front and I can pick up fresh flowers for the restaurant on the way.

I also love taking my horse on trail rides and I enjoy practicing yoga on a day off.

What are the three most important things that you do each day?

Take some deep conscious breaths, get some sunshine and love my family

It’s my dream to …

Live a life full of passion. Through this, my dream is to create a brand and product line. I would like the Greenhouse Factory to be a household name. A name that provokes compassionate and wholesome choices.

What is your favourite meal of the day? 

Due to the long hours I work, brunch has become a new meal concept for me, and is now my first and favourite meal of the day. I love to start the day with a big cold pressed juice packed full of greens and then I like to eat the Greenhouse smashed avocado topped with our corn and quinoa salsa. I get my greens, protein, carbs and fats all from the one meal!

What’s the best piece of advice you’ve been given?

To simply believe in my vision and trust in myself.

Natalie's Raw, Vegan Cashew Cheese 

You will need 

  • 1 cup of organic raw cashews (soaked for a minimum of 3 hours - best results soaked overnight)
  • Pinch of himalayan salt
  • Juice of 1 lemon
  • 1 tbsp. of nutritional yeast
  • Water to reach desired consistency 

Blend together until a smooth cheese like consistency is reached.
