Growing up, my mum used to make a yummy lemon slice that I LOVED! I've been trying to create a healthy raw version for a little while now, and this one is pretty close to the original. The perfect mid morning snack with a cup of chai tea!
RAW LEMON SLICE
You will need
2 cups raw almonds (soaked overnight)
1 cup coconut
Zest of 1 lemon
1 cup dates
4 tbsp melted Coconut oil
2 cups raw cashews (soaked overnight)
1/4 cup maple syrup
Juice of 1 lemon (approximately 1/2 cup)
Plus coconut to decorate
Combine all base ingredients in a blender. Blend until a biscuit like texture is reached. I like to leave the nuts a little chunky, cause it looks pretty and adds a bit more crunch.
Press the base into a baking paper lined glass dish, or slice tin, and place in the freezer while you make the topping.
Add all of the topping ingredients to a blender and blend until smooth. The consistency should be thick and creamy. If it's a little dry, add some more lemon juice.
Using a spatular, evenly spread the topping over the base and return to the fridge to set for 6-8 hours. Or in the freezer for less time.
Dust with coconut, slice and serve! Enjoy!
